Want a summer recipe for popcorn? One that has that tangy zest and sweet buttery flavor. You’ll definitely love this recipe for Lemon Zest Popcorn. And as a bonus, you can make a big batch and give some in mason jars as a gift. This is an idea I had for an end of the year gift I gave my sons’ teachers. I included the mason jar full of popcorn in a tote bag with a few more summer-inspired gifts. (You can see the embellished tote bag I made here.) But, after you sample this popcorn, you may decide it’s too good to share. Let’s make this super simple summery treat!

Optional: Drinking Mason Jar Mugs, Sip & Straw lids and Mason Jar lids

Instructions:

Melt butter in saucepan. Add 6 drops of DoTerra Lemon Essential oil (or you can add about a tablespoon or lemon juice). Add sugar. (I used coconut palm sugar, but you can use regular granulated sugar if you wish.) Mix well.

Meanwhile, grate one lemon for zest.

Add grated lemon peel to melted butter mixture and stir.

Spoon melted butter mixture over popcorn a little at a time.

Toss to coat after each lemon butter drizzle. Add salt to taste.

Every year I try to come up with a simple and inexpensive gift idea for teachers and service providers in my life. But, I don’t want the gifts to look cheap. This year I put together these simple Hot Cocoa on a Stick Gift Mugs. They look festive and provide a nice warm treat for anyone on your “I really should get them a little something” list. Read on to learn how to make these simple gift mugs.

There are a variety of hot cocoa on a stick recipes. But, the recipe I used for the hot cocoa on a stick can be found on the King Arthur Flour website. The mug and coaster gift idea can be put together quickly and efficiently to make several for a last minute gift idea.

Are you ready for the quickest and easiest tutorial on the Pretty Handy Girl website? Set that stopwatch, because once you have all the materials this Holiday Gift Idea aka Hot Cocoa on a Stick is going to solve your small gift giving dilemma.

Ready. Set. Go! Put the pine bough, hot cocoa on a stick, printed directions, and (if you’re feeling extra generous) add a gift card. Insert all items neatly into the mug. Center your mug on the wood slice coaster.

Use washi tape to secure the mug to the wood slice coaster. (Overlap at least an inch or two of washi tape inside the mug rim. Use one continuous piece of washi tape going from one side of the mug, under the coaster, and back up the opposite side of the mug.) Use caution when handling the mugs as the washi tape can rip if jostled too much.

Add a gift tag if you like. Or set them on a tray to deliver in person or put them out as holiday party favors.

I have been pinning lots of grilled pizza recipes, but honestly I’ve never grilled a pizza before. Then I stumbled upon a recipe for grilled corn pizza and decided to alter it a little to suit my taste buds. The result is a light summery flavored pizza you can make in a jiffy.

 

If you’re like me, you might want to start by cleaning your grill. But, if you’re fine with a little burger grease on the bottom of your pizza, go ahead and get grilling!

Ingredients:

Grilled Corn Pesto Pizza

Instructions:

1. Pre-heat your grill on medium high.

2. Soak corn inside the husks for 10-15 minutes in your sink.

3. Place the corn (still inside the husks) on the grill for 10 minutes to steam cook (rotating halfway through.) The last few minutes, peel the husks back and lay them on the grill to char the exterior of the corn. Rotate the corn and sprinkle salt and pepper to your taste.

4. Place the pizza crust with the top facing down on the grill for a few minutes to toast it. Remove the crust and set it on a plate (or pizza paddle.)

5. Spread pesto onto the pizza crust.

6. Cut corn off the cob. Mix corn and parmesan in a bowl.

7. Spread the corn mixture on top of the pesto-covered crust.

8. Add sliced tomatoes and fresh mozzarella slices onto the the pizza.

9. Put the pizza on the grill and close the lid. Grill the pizza until the cheese starts to melt (check frequently and move it away from the heat if the crust starts to burn.)

10. At the last minute add the sliced basil on top of the pizza. Remove the pizza before the basil browns.

Easy Peppermint Snowflakes | Pretty Handy Girl

Last year I made these Easy Peppermint Star Ornaments. They were a lot of fun to watch as they melted and fuzed into a snowflake ornament. My son asked if we could make them again this year. Because the kids are officially out of school now, I thought this would be the perfect holiday activity today.

Materials:

Directions:

Pre-heat oven to 300˚F.

Unwrap the candies. You’ll need 13 candies per star. Lay the peppermints onto a baking sheet covered with parchment paper. Arrange them into a snowflake design:

Place the baking sheet into the pre-heated oven. Bake for 8 minutes.

Remove the tray and immediately use a large needle to create a hole in the top of one of the outer points of the snowflake.

Allow the peppermints to cool and thread a green ribbon through the hole and tie.

Wrap up the Peppermint Star Ornaments in treat bags and give them to your friends and neighbors!

Quick & Easy Peppermint Oreo Recipe : Great for last minute cookie exchanges or gifts

 

Want a quick and easy holiday recipe you can make with the kids? When you don’t have time to bake, but you still want to give a homemade holiday treat, try this recipe for Peppermint Oreos!

Quick & Easy Peppermint Oreos

Ingredients:

  • 1 Pkg. of Oreo cookies
  • 1 Pkg. of peppermint candies
  • 1 Pkg. of white chocolate chips

Instructions:

Place the peppermint candies in a double ziploc bags. Let the kids hammer them to smithereens! (I placed scrap wood under the peppermints to protect the countertop.)

While the kids are pounding away to their heart’s content. Melt white chocolate chips in a double boiler (or in the microwave. But, the double boiler will keep the chocolate from hardening as fast.)

Pry the hammers from your kid’s hands. Place the crushed peppermints into shallow bowls (one for each child.)

Roll the edge of the oreo cookies into the white chocolate.

Then roll them into the crushed peppermints.

Lay the cookies onto wax paper to cool.

 

After they cool, eat them, gift them or save them for a snowy day.

I’ve been trying to give up sugar and developed this Healthy Sugar Busters Coffee based loosely on a Bullet Proof Coffee recipe I found. Research has shown that we all need healthy fats to support our brain function and a healthy diet. Healthy fats can be found in coconut oil, grass-fed butter, MCT oil, avocados and much more. You can read about a diet rich in healthy fats and oils in Dr. Mark Hyman’s Eat Fat Get Thin book (affiliate link.)

Instead of grass-fed butter and MCT oil, I used coconut oil and almond creamer plus almond milk to make my Healthy Sugar Busters Coffee. You will not believe how tasty this coffee is. And the frothiness of this drink makes you forget there’s little to no sugar in it.

Start by brewing your favorite cup of coffee. (I’ve switched to decaf per my doctor’s suggestion. But, occasionally I’ll add a little caffeine coffee to my drink.)

While the coffee is still hot, add one tablespoon of coconut oil to your coffee.

Add one tablespoon of creamer. (Note: the Califia Almond creamers have a few grams of sugar per tablespoon. If you want zero sugar, buy the unsweetened Califia Almond Creamer.)

Add Almond Milk to taste. (Zero grams of sugar in the Almond Breeze Vanilla Unsweetened, so feel free to add more if you like a light colored coffee.)

Poor the coffee mixture into your blender.

Put the blade attachment (or lid) on your blender cup and give it a whirl. The Magic Bullet doesn’t take more than 15-20 seconds to whip the coffee up to a beautiful froth. (I used to use a Ninja before, it took longer, didn’t froth as much and ultimately the blender died. Plus, the cup started to leak at the blade attachment. Boo.)

Chipotle Ranch Chicken Salad - Easy, Healthy and Delicious! | Pretty Handy Girl

I have a new favorite salad and it is DELICIOUS!!! A few weeks ago we went to the beach for our vacation. At the end of the week I wanted to use up as much food in the fridge as I could. You understand the struggle, right? Who wants to waste food?

In the fridge we had leftover rotisserie chicken, corn, and salad ingredients. I also had some Drew’s Chipotle Ranch salad dressing (affiliate link), I could put that sh*t on everything! I was not paid to say this, Drew’s doesn’t know who I am, this is just my newest favorite salad dressing and I HAD to share it with you.

I wracked my brain and blindly dove into creating this Chipotle Ranch Chicken Salad. I added a dash of this and a heap of that. And when I was done….it was AMAZING! Watch out Chopped, I’m your next top chef!

Here is my recipe for Chipotle Ranch Chicken Salad. I know you’ll be hooked too.

Ingredients:

3-4 Skinless Boneless Chicken Breasts
Head of Red Romaine Lettuce
1 Avocado
1 Ripe Tomato
1 Red Onion
1 Ear of Corn
1 Lime
1/2 cup Plain Greek Yogurt
1/4 cup Drew’s Chipotle Ranch Dressing
Sea Salt
Pepper
1 Tbsp. of Butter
2 tbsp. chopped Cilantro
Optional: Frank’s Red Hot Sauce

Feel free to add your own favorite Southwestern vegetables, some cheddar cheese or black beans.

Instructions:

1. Put a pat of butter into a fry pan and heat until melted. Sprinkle salt & pepper onto the chicken breasts. Squeeze lime juice over breasts. Add a dash of Frank’s Red Hot Sauce if you like your chicken spicier. Heat chicken until browned on both sides (8-10 minutes) and no longer pink in the middle. If your chicken breasts are super thick, butterfly them.

2. While the chicken is cooking, chop the salad vegetables (lettuce, tomato, red onion, and cilantro.) To cook the corn, microwave for 3 minutes INSIDE the husk. Let the corn cool slightly, then cut off the bottom of the corn cob (cut through the corn husk and ear.) Grab the corn silks and husk at the top and shake until the ear falls out. Magically all the silks will be stripped off! Cut off kernels from the the ear.

3. When the chicken is fully cooked turn off the heat but leave the pan on the burner. Mix yogurt and ranch dressing together in a bowl. Pour over chicken and flip chicken to coat in the yogurt dressing mixture.

4. Put salad vegetables in bowl. Top with sliced chicken, sliced avocado, and cilantro. Drizzle with more Drew’s Chipotle Ranch Dressing. Squeeze some more lime juice on top and enjoy your salad!

Gluten Free Chicken Noodle Soup | Pretty Handy Girl

Did you know that Costco has chicken burgers that taste really good in soup? You read that right! Amylu Chicken Burgers are sold in Costco and they are super yummy and easy to cut up and throw into this hearty and healthy soup.

Last fall, I got a killer cold. When I’m sick I crave Chicken Noodle Soup. Raise your hand if you grew up on Campbell’s Chicken Noodle soup? It was the soup my Mom gave me anytime I was ill. As an adult, I usually make my own so I can add more veggies and control the sodium. But, I still love those little squares of processed chicken in the Campbell’s version. (Am I a freak?!)

Anyway, I hadn’t been to the grocery store in a while and our fridge was almost empty. Luckily I had just enough ingredients to throw together in a pot and make this yummy Gluten Free Chicken Noodle Soup. My good friend gave me two Amylu burgers to try (because buying a Costco quantity of something you’ve never tried before is brave) and they were still sitting in the fridge. I was hesitant to try them, but in a pinch I had to use what I had on hand to make my chicken noodle soup.
